Description

Deep red wine with bluish tints, and lively and stylish shades. Its great aromatic intensity is an expression of fruit, such as very ripe quince and wild berries, and spices, coupled with the tobacco and vanilla nuances contributed by French oak. It feels smooth and drinkable?a full-bodied, distinctly intense wine with superb structure, featuring ripe and sweet tannins, and a long and pleasant finish. The wine expresses substantial typicity and concentration; however, it is endowed with a softness that adds to its graceful and typical character. It is indeed a varietal of remarkable structure and great ageability ?a true product of Bodegas Salentein.

The grapes for this varietal are grown at Finca La Pampa, which lies at 1.300 meters (4.200 feet) above sea level. Double cordon trellis training affords a well-marked zone of production at a single level. The canopy was allowed to develop to somewhat exceeding 1 meter, for correctly feeding clusters. Leafing and thinning are some of the usual tasks leading to the desired homogeneity at harvest time. Well-balanced vines, low production levels, perfect irrigation control and adequate ripening are the ingredients of our unique Salentein style. 100% own vineyards. 100% handharvested.

2005 was an excellent year for this varietal. Temperatures were appropriate, with dry days and a maximum day-time mean temperature of 25ºC (77°F) and night-time temperature of 14ºC (57°F). This low night-time temperature enabled great daily thermal amplitude, which in turn led to the preservation of the grape's natural acidity. A year of very favorable climate, with low rainfall in the spring, particularly close to harvest-time, which resulted in no dilution or lost quality. To achieve the required concentration, yield per plant started to be defined in the winter with pruning, leaving the number of buds required to produce approximately 3,5 kg./plant. As the cycle proceeded, other steps were taken: first buds and then clusters were thinned so as to define the final load per plant at 3 Kg. As part of the process, the most favorably positioned clusters were selected. These steps were coupled with conscientious irrigation management, which enabled managing vine vigor and health, while waiting for the right ripening point. The process concluded with leafing close to harvest time, designed to improve the reach of light inside clusters, but always avoiding direct sunlight. The optimum harvest time was defined after weekly tasting / monitoring of berry components?skin, pulp and seeds. Grapes were 100% hand-harvested early in the morning, and placed in 20 kg. plastic bins. Cluster selection was followed by gentle skin removal, without breaking berries. The best berries were then selected. From the selection table, the whole berries were directly placed in a 450 kg. hopper, and transported to stainless steel tanks without using pumps. Cold maceration lasted three days at 10°-12ºC (50°-53°F) with berries virtually whole, resulting in a delicate extraction of both aroma and color. The next step was the inoculation of select yeasts to start fermentation, which took place in a controlled manner between 24º (75°F) and 26º (79°F) for 10 days. Daily pumping-over and manual trampling of the cap was performed daily and very gently until the end of the fermentation period. Subsequently, maceration continued for 15 additional days. After this stage, the wine left the vats and was immediately racked to first, second, and third-use French oak barrels, where malolactic fermentation occurred. The wine was bottle-aged for 12 to 14 months and then bottled without clarifying or filtering. It was bottle-aged for six additional months.
