The Castello della Sala Bramito del Cervo Umbria IGT runs into the glass with a wonderful, straw-yellow color. The golden reflections on the edge of the glass are a sign of the outstanding quality of this wine.
On the nose we identify the fruity fragrance typical of this grape variety with pleasant notes of vanilla. Soft, balanced and with a very good structure on the palate.
The grapes come from the vineyards of the Castello della Sala, which are located at 200 - 400 m above sea level. are on sediment soils rich in marine fossils with clay components. Immediately after the harvest, the grapes were placed in a cooling / conveying system in order to cool them down to a low temperature before destemping and pressing (important for preserving the aromas typical of the variety). After this phase, the must remained in contact with the skins at 10 ° C for several hours in order to extract (extract) all the aromatic substances. It was then transferred to French oak barrels (Alliers and Tronçais), in which the alcoholic fermentation took place. After a short period of maturation in the wood and partial malolactic fermentation (the malolactic fermentation), the wine was decanted and then bottled.
