Description
Frederiksdal cherry wine Nielstrupmark is the world's first single-orchard cherry wine. The cherries are picked exclusively from the winery's best orchard, Nielstrupmark, which is home to the oldest Stevnsbær cherry trees on the Frederiksdal Estate.
Selected cherries are left to spontaneously ferment for 3-5 days, after which they undergo a final fermentation in stainless steel tanks. The wine is then stored for 18 months in 225 and 400-litre French wooden barrels. Only 11 out of the 40 barrels from Nielstrupmark have been selected for the 2012 vintage, with the remainder left to either rest on its lees (sur lie) or undergo further ageing as a reserve wine.
Nielstrupmark is Frederiksdal's most elegant wine, with violet notes on the nose and a cowberry and raspberry finish. It is a perfect food match for red deer, pâtés, poultry liver, major cheeses or desserts made with bitter chocolate.
