The Winery: The winery?s prime philosophy is quality before quantity, sustainable winegrowing through respecting nature and the creation of pure wines that hold the flavours of the region. Castell is situated in the Franconia region in the middle of Germany. Six of Castell?s eight best known single vineyards are in the sole property of the Fürstlich Castell?sches Domänenamt. The winery owns 70 ha of vineyards, of which 70% are on hillsides and 30% on steep slopes. Variety: The Silvaner grape is closely connected to Castell because its history in Germany started at Castell in 1659. In that year the first Silvaner was planted on a Castell vineyard. A contract dating from this time is still on display in the princely archives. Vinification: fermentation occurs in the bottle for at least 9 months. It has a charming and elegant fruitiness with mirabelle and lemon flavours predominating in the mouth A mellow taste, fine mousseux, creamy and mouth filling. Recommendations: drinking temperature 8-10°C, a perfect partner for festivities, as an aperitif or with shellfish and lobster.
