Rich, expressive flavour, genteel clarity and balance - these are the characteristics of the Sake by Sohomare, established by the Kono family in 1872. To achieve richness and complexity, the brewery follows the traditional kimoto method, which takes two weeks longer than with the modern brewing method. Further refinement is achieved by blending sakes made with different yeasts and different vintages as well.
