What makes Champagne so special is the secondary fermentation in the bottle, the so-called "méthode traditionelle" or formerly known as "méthode champeoise". Although this technique is also practised by other producers of sparkling wines all over the world, only the sparkling wines from the Champagne region of France are legally referred to as Chamapgne according to EU wine laws. One could argue that Champagne is the world's most popular noble beverage, always at hand if there is a special occasion to celebrate. There is a famous quote attributed to Mme. Lily Bollinger: "I drink Champagne when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. Otherwise, I never touch it - unless I'm thirsty."
