The grapes are manually collected, destemmed and pressed. The process of vinification starts inside conical oak casks. The alcoholic fermentation takes 7-10 days and the following skin maceration 8-10 days at the controlled temperature of 27°.
After the vinification, it follows the 12 months maturation period inside wood
barrels with 30/40 Hl of capacity. Before the presentation on the market, "Ripaltella" remains in bottles for about 3 months.
