The scarecrow on the Yalumba Y Series Cabernet Sauvignon label represents the importance of `community` to Yalumba. In the weeks leading up to the biennial Barossa Vintage Festival, of which Yalumba plays a major part, the Barossa community bands together to craft scarecrows, which are traditionally seen as `guardians of abundance`. These scarecrows adorn vineyards, roadsides, shop windows and town entrances before the end-of-vintage celebrations commence.

The grapes were fermented in static potter and rotary fermenters. Warm temperatures at the onset of fermentation and also 3-5 days post ferment maceration has helped extract soft fleshy tannins and build wine structure.

The 2007 Y Series Cabernet Sauvignon has great varietal character, showing blackcurrant, tobacco leaf, dark chocolate and a sprinkle of aniseed spice. A medium bodied red with dark berry flavours, savoury overtones and classical chalky tannins give the wine great length.

Vintage 2007 followed on from an extremely dry growing season. This drought presented a number of viticultural challenges, with localised spring frosts causing the greatest concern. Low bunch numbers and very small berry size combined with higher than average temperatures caused the grapes to ripen nearly a month earlier than usual.
